Rajas con Crema (Pasilla Chilies and Onion Strips with Cream)

This is a recipe that I usually make every Christmas eve for our Mexican Fiesta Dinner. But my nieces have been requesting it for our Sunday Family Dinner Night, So I made it a few weeks ago when we started up again after the summer break. I actually got this recipe from a Mexican Cookbook a long time ago. when I make it I do it by memory it only has 3 main ingredients

Rajas con Crema


12 Pasilla chilies roasted, peeled, devained, seeded and sliced into strips

2 Onions (brown or white) thinly sliced

2-3 tbsp oil

1 tbsp of butter

1 bottle of Mexican Cream (it's like sour cream)

salt and pepper to taste
Saute onions in the oil and butter until translucent and tender. Season with salt and pepper.

add chilies and let simmer for 5 mins
add the bottle of cream and continue to simmer until all the flavors meld together.
serve with warm corn tortillas.
Tip: I roast my chilies on the BBQ. I roast the whole lot at one time and as soon as I take them off the grill I put them in a plastic Bag (the kind that you put your veggies at the market in) and let the chilies sweat for about 15 -20 mins. I like to peel them under the running water but I was told if I do that the flavor is washed away. I still do it under the water, I don't put the peels in the garbage disposal.
